Created with the firm purpose of rescuing and preserving the culinary legacy of our ancestors, our school stands as a bridge between the past and the present. But we know that Mexican cuisine is much more than a cookbook; it is a universe of ancestral techniques and vast historical knowledge. Therefore, our teaching goes beyond the simple act of cooking. Through our hands and senses, we explore the millenary richness of its endemic ingredients and unravel the complexity of its cultural fusions, where the pre-Hispanic merges with the colonial to create one of the most sophisticated and recognized cuisines in the world.

At our school, the metate and the molcajete coexist with the art of nixtamalization and the craft of stuffed chiles. We do not only teach cooking; we share the history behind each dish, the origin of each spice, and the cultural meaning of every celebration around the table.
